This is how you do Saturday night in Noosa. Sunset Sessions brings fire, flavour and three of Australia’s most exciting restaurants together for a beachside dinner you won’t forget.

Lanai’s Ryan Fitzpatrick, Stanley’s Louis Tikaram, and Serai’s Ross Magnaye are serving up one collaborative feast, inspired by the islands of the Pacific and the spice markets of Asia, each plate will be packed with creativity and flair. It’s the perfect showcase of modern coastal dining at its most playful and it’s designed to be shared.

Add premium beverages from our festival partners and as the sun goes down over the beach, a buzzing atmosphere sets the scene for an evening that’s as vibrant as it is delicious.

Louis Tikaram ~ Stanley, Brisbane

Stanley’s philosophy is centred around great food, friends, fishermen and farmers. Inspired by Head Chef, Louis Tikaram’s travels across the globe and grounded by his local roots, Stanley’s menu showcases some of the best seafood, meat, vegetables and fruit in the world.

Stanley’s ethos combines he best produce, most sourced locally, supporting our Australian industry with traditional Cantonese flavours. Tikaram’s fresh prespecitve and mindset of venturing outside the box adds to the unique experience of Stanley.

When Ross Magnaye and Shane Stafford started Serai, their vision was to create a restaurant that would fit perfectly in the heart of the Philippines. To replicate the spirit, vitality, passion and sense of fun, they knew Serai would become a home from home for our diners.

​At Serai, right in the heart of Melbourne, you can watch the chefs prepare and fresh food daily in the open kitchen at the chef’s omakase table or you can relax in the restaurant and bar with a glass of hand picked, vin naturel selections or signature cocktails.

This Filipino sensation was also a worthy nominee for Best New Restaurant of the year in 2023 in the Gourmet Traveler Awards.

Located along the stunning Noosa River, Lanai embodies the essence of Noosa’s elegance. Presenting an array of shareable dishes, ranging from small to large, Lanai emphasizes sustainably sourced seafood, native ingredients, and locally crafted artisan products.

As owner and Executive Chef at Chef-hatted Lanai Noosa, Ryan’s remarkable career has been nothing short of a dream for any aspiring Chef with his passion for travel, which has spanned more than 19 years, taking him to the far reaches of Europe, the Pacific and Asia.
